I prepared this recipe for my first visit to the Alaskan Vegan Society's member potluck, in Palmer, AK.

It is *extremely* easy to make, especially with an instant pot.

If you don't have an instant pot (an "Instapot"), I highly recommend getting one.

It is probably the most significant new technology for the kitchen since the microwave.

### Recipe

Vegan Dill-Dijon Potato Salad, 1/25/2020

Dry Ingredients:

* 3-4 medium yukon gold potatoes
* 3-4 medium red-skinned potatoes
* 1 medium russet potato
* 1 dill pickle diced
* 2 green spring onions chopped finely

Wet Ingredients &amp; Spices:

* 1/2 cup Vegan Mayo [Vegainaise used]
* 2 tsp Dijon Mustard [Grey-Poupon used]
* 1 Tbsp or 2 dustings, Dill weed, freeze dried
* 17 grinds, Black Pepper, ground coarsely
* 1/2 tsp Salt, table, iodized
* as desired. Hungarian Paprika, Sweet

Instructions:

1. Dice potatoes as desired and boil until tender, or place in an instapot (as I did to yield the photographed results), with some water (~2 cups), and pressure cook 4 minutes.
1. Mix pickles, spring onions, and all remaining ingredients except paprika in a large bowl (I use a roughly 4 quart tupperware bowl.)
1. Mix in the potatoes after straining out the water.
1. Top with Paprika for color as desired.
1. Cover, chill and enjoy.
